Having a mother is a blessing. Being a mother is a gift. Celebrating your mother is and all that she has done is special. Mothers make things possible. Mothers are heroes, they’re so special and so magical that there’s a day dedicated just for them. Even though that’s not enough to show the appreciation to their dedication.
Mother’s Day is all about MOM and is celebrated all over the world. Some buy gifts, some go to dinner, some do both. But, if you’re lucky, you’ll find a wonderful recipe just for mom and make it to her surprise. Effort and love all wrapped into one, what more could a mom want? Maybe a pair of diamond earrings but we won’t put that pressure on you!
So, what kind of dish should you prepare for your awesome mom? BREAKFAST! Mom is always making you breakfast, putting away your clothes, giving you this and giving you that. Why not start her day with something DELICIOUS that will warm her heart and make her tummy happy? The rest of her Mother’s Day will be a breeze and you will get all the brownie points!
With that said, let’s get to cooking. Make sure you have a Waffle Baker, just in case! The Mother’s Day recipe I highly recommend is none other than a “Wafflemisu Cake”. Just the name makes me hungry. The recipe is as follows and don’t forget to serve it to her in bed! Bring her a cup of her favorite kind of coffee or milk, whatever she prefers and surprise her before she even begins her day. That will bring so much joy to her heart and really show how much you care. Being appreciative and putting forth the effort will not go unnoticed, believe in that and give it your all, you can do it! Cooking is not necessarily my specialty, but you better believe I will be home this weekend and am going to surprise my mom with Wafflemisu Cake with a smile and a warm cup of joe! Here you go, have fun with this, it’s all for her.
Wafflemisu Cake Recipe for Mom:
Makes 4 Waffles (Perfect!)
Ingredients:
Waffles:
6 Large Eggs, separated
1/8 Teaspoon Cream of Tartar
3/4 Cup Tablespoons Granulated Sugar, Divided
1 1/2 Cups All-Purpose Flour
1/2 Teaspoon Baking Powder
1 Teaspoon Mi Huerta Vanilla Extract****
1/4 Teaspoon Salt
For Filling:
1 Cup (8 ounces) Mascarpone Cheese
1/2 Cup Granulated Sugar
1/4 Teaspoon Mi Huerta Vanilla Extract***
2 Cups Heavy Cream
1 Cup Brewed Espresso, Lukewarm
Cocoa Powder, for dusting
Chocolate Curls, for garnish
Directions:
Preheat the Waffle Baker
Combine egg whites and cream of tartar in the bowl of a KitchenAid Stand Mixer fitted with a whisk attachment. Beat on medium-high speed until frothy, then add 1/4 cup
granulated sugar. Then increase the speed to high and whip until the whites hold soft peaks. Transfer to a clean bowl and set aside.
Now, return the mixing bowl to Stand Mixer and don’t worry about a little bit of egg white being in there. Replace the whisk with a flat beater attachment. Then add the egg yolks and remaining 1/2 cup of sugar to the bowl. Beat on medium-high speed for 1 to 2 minutes or until yolks are thick and light yellow in color. Mix in Mi Huerta Vanilla Extract and salt.
In a small bowl, whisk together flour and baking powder until evenly incorporated. Fold into egg yolk mixture until it’s stringy and only a few streaks of dry ingredients are left. Fold in 1/3 of the egg whites to lighten; add remaining egg whites and fold until just incorporated. Do not over mix.
Next, scoop a heaping 1 cup of batter into the Waffle Baker, flip and repeat with remaining batter on other side. Cook for about 3 minutes and 30 seconds or until the waffles are golden brown and crisp. Remove from the Waffle Baker and repeat with remaining batter. Let the waffles cool.
To prepare the filling, combine the mascarpone cheese, sugar, and Mi Huerta Vanilla Extract in the bowl of a stand mixer fitted with the flat beater attachment. Mix on medium speed until everything is evenly combined. Add the heavy cream and beat until thickened and smooth. If the filling is a little too thick, mix in another tablespoons or two of heavy cream as needed. Remember the filling will continue to thicken as it stands.
Now, place 1/2 inch of brewed espresso in a shallow plate or pie pan. Dip the bottom of EACH waffle BRIEFLY in the espresso, then stack on the serving plate for mom. Spread a generous 3/4 cup of filling between each layer, repeating with remaining waffles. Dollop remaining mascarpone mixture on top, then dust with cocoa powder and sprinkle with chocolate shavings.
BEST BREAKFAST EVER! Serve this delicious masterpiece to your mom with fresh flowers, coffee and a big hug. It does not matter what age you are, this special effort will never be forgotten and she will look back on it with so much love and appreciation. That is what Mother’s Day is really all about.

April is the month of spring season and also for celebrating how blessed we are to be alive on the planet, Earth! Earth is such an amazing place to live and we need to always remember that. What better way to remember and show our appreciation than by coming up with fabulous recipes for the whole family to enjoy and share? That is exactly what we are going to share here. A very Happy Earth Day recipe for sure!
Planet Earth Cake!
Here are the ingredients:
For Cake:
1/2 cup unsalted butter
1 1/4 cups granulated sugar
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup whole milk
1/2 cup blueberry juice
2 teaspoons almond extract
2 tablespoons flour for sprinkling over diced blueberries
Small package of blueberries
Drop or two of blue food coloring
4 egg whites, beaten to stiff peaks
Directions for the PLANET EARTH:
- Preheat oven to 340 degrees. Grease two 7” spring-form pans (or one 9”) and line with parchment paper.
- 2. Beat the butter and sugar together in the bowl of a stand mixer until creamy. In a separate bowl, whisk together flour, salt and baking powder. Combine milk, blueberry juice and almond extract, and add alternately to the butter and sugar with the flour mixture.
- 3. In a small bowl, sprinkle the 2 tablespoons of flour over the diced blueberries and stir until the flour has been completely absorbed. Note: It’s okay if the blueberries still have a little juice on them after this.
- 4. Stir blueberries into the batter. Stir in food coloring if desired
- 5. Fold stiffly beaten egg whites into the batter. Pour into prepared cake pans and bake for 50-60 minutes.Remove from pan and allow to cool completely on a wire rack.
Ingredients for the Planet Earth’s Icing:
Vanilla Swiss Meringue Buttercream Frosting:
Green Food coloring
5 egg whites
1 cup sugar
Pinch of salt
1 pound (4 sticks) unsalted butter, cubed, at room temperature
3 teaspoons Mi Huerta Vanilla Extract
Directions for the Planet’s Icing!
- Set a saucepan filled one-third full of water over medium-high heat and bring to a simmer.
- Whisk together the egg whites, sugar, and salt in a large heatproof bowl. Set over the simmering water and whisk until the mixture is hot to the touch and the sugar has dissolved.
- Transfer the mixture to the bowl of a stand mixer fitted with the whisk attachment.
- Beat on low speed for 2 minutes. Increase to medium-high until stiff peaks are formed.
- Continue beating at medium-high speed until the mixture is fluffy and has cooled (the mixing bowl should feel cool to the touch).
- Turn the mixer off and switch from the whisk attachment to the paddle. Turn the mixer on medium-low and add the butter, a few cubes at a time, beating until well incorporated before the next addition.
7. Add the Mi Huerta Vanilla Extract. Divide batter and tint with food coloring, if desired. I kept a little Un-tinted frosting out to pipe around the edges of the cake. To achieve lighter blue/green tint, try using a dot of each of Sky Blue and Kelly Green Wilton gel food colorings.
- Beat until the frosting is thick and completely smooth.
- Store in an airtight container until ready for use.
What a Wonderful World
Our world is sacred. It should be treated with love and respect. We only have one planet and by improving daily habits we can make it that much healthier and better for all of us to live on. Reuse and Recycle is a wonderful process you can teach your kids. There are recycle bins everywhere, educate them! Show them what recycling can do for our world and how it will make it better. We have to remember our children are like sponges and we are their role models. They see us do things and they repeat the cycle. By saying that, if we recycle certain GOOD habits, they will do so as well! I couldn’t be more excited to share this recipe and hope you all enjoy it!
Don’t forget, we have one life and one world so do your best every day to live it to the fullest and respect and love Earth and it will do the same for you!
Ways to make Earth a better place:
- Pick up any trash you see outside and throw in the nearest trash can (animals and planet Earth will thank you! )
- Recycle plastic bottles, glass bottles and plastic items
- Plant seeds to increase our planet’s beauty, oxygen and environment
- Do not litter
- Reuse items when possible (ex: turn used milk cartons into plant boxes)
- Conserve water by using it only when necessary, (ex: use cold water when doing laundry, wash the dishes in the sink rather than in the dishwasher
- Conserve energy by turning off all the lights in every room when you are not at home and turn off the air conditioning (ex: this will save you money too! )
- Walk to your nearest locations rather than drive (ex: my grocery store is 10 minutes walking distance so I walk there whenever I need a couple of items)
- Use Aerosol free items
- Use glass cleaner wipes instead of paper towels
- Wait until you have a full load of laundry to run the washing machine
- Buy water by the gallon and refill it by using a filtration system (ex: Brita, Sink filtrators, etc)
- Be kind! Earth Loves you!

- Need to take care of some household lingering odors? Guess what can help? You got it, Mi Huerta Vanilla extract! Not only does it lift odors, but a compound found in vanilla may serve as an antibacterial. Just imagine saving money and getting your house to smell of natural vanilla goodness. Sounds like the perfect place to call home!
- Vanilla can be used on your skin! It just keeps getting better doesn’t it? Vanilla is proven to be a skin saver thanks to its antioxidants. If you would like to try it out follow this revitalizing scrub recipe: Squeeze juice of 1 lemon into a bowl; discard the seeds. Now, mix the ingredients well. Apply scrub to your face, yes you read that right! Massage in for a few minutes, make sure you avoid your eyes. Rinse with warm water, then splash with cold water.
- Last but definitely not least, our Mi Huerta Vanilla extract can be used as BUG REPELLENT! It is extremely effective at repelling those pesky mosquitoes because they literally can’t stand the smell. Is that not awesome or what?! You better believe I have the recipe on hand ready to go as soon as summer approaches! All you have to do is combine 2 ounces of Mi Huerta Vanilla extract and 2 ounces of water in a small spray bottle. Spritz it onto your exposed skin and watch the flies fly away. Adios bug-bites!

Mi Huerta Market: Vanilla Monday
Happy Monday world! One of the greatest things we can do in this world is share. The more you share the more you gain in life. Mi Huerta sells many products but we really pride ourselves with our Mi Huerta Mexican Vanilla. It’s 100% all-natural, made with real vanilla extract all the way from Mexico. We are so pleased to share our very own, healthy and natural products with you on a national level.
Today, from Mi Huerta Market we are going to make delicious Vanilla Cinnamon Pancakes! I hope your stomach is big because these pancakes are going to have you coming back for more!
Here are the prime cooking ingredients needed to create these yummy Vanilla Cinnamon
Pancakes.
2 Cups Flour
3 Tbsp White Sugar
1 1/2 Tsp Baking Powder
1 Tsp Salt
2 Cups Buttermilk
1 1/2 Tsp Mi Huerta Vanilla extract*
1/2 Tsp Ground Cinnamon
1 Egg
1/4 Cup Melted Butter
INSTRUCTIONS:
Melt the butter and set aside to cool down slightly.
To a mixing bowl, add the flour, sugar, baking powder, baking soda, and salt. Use a whisk to combine all dry ingredients well.
In a separate bowl, combine buttermilk, Mi Huerta vanilla*, ground cinnamon and egg. Whisk to combine. Add melted butter and whisk again.
Slowly pour the wet ingredients into the dry ingredients, whisking and stirring to mix it all together. Once it’s combined, stop mixing. If you over-mix, your pancakes won’t be light and fluffy.
Set pancake batter aside and heat up a large skillet or griddle over MED-LOW heat. Add a bit of butter to the preheated griddle and spread it out.
Use a ¼ or ⅓ cup measuring cup to scoop the pancake batter onto the griddle or skillet. Slowly pour it onto the surface, circling outwards to make a nice circle.
Let the pancake cook about 2-3 minutes. You’ll notice bubbles popping up on the surface of the pancake, if the edges look set, carefully flip the pancake over. Cook another 2 minutes on the other side.
Remove to a plate and cover with a kitchen towel. Alternatively, you can place the pancakes on a baking sheet and keep it in a low heat oven (175-200 degrees), until you’re ready to serve.
NOTES:
** Feel free to adjust the amount of Mi Huerta Vanilla* and cinnamon to your liking.
** If you leave out the vanilla and cinnamon, you have a great basic buttermilk pancake recipe.
** This recipe makes enough for 4 people, so feel free to double to feed more people or to freeze some.
