Mothers Rule the World
Having a mother is a blessing. Being a mother is a gift. Celebrating your mother is and all that she has done is special. Mothers make things possible. Mothers are heroes, they’re so special and so magical that there’s a day dedicated just for them. Even though that’s not enough to show the appreciation to their dedication.
Mother’s Day is all about MOM and is celebrated all over the world. Some buy gifts, some go to dinner, some do both. But, if you’re lucky, you’ll find a wonderful recipe just for mom and make it to her surprise. Effort and love all wrapped into one, what more could a mom want? Maybe a pair of diamond earrings but we won’t put that pressure on you!
So, what kind of dish should you prepare for your awesome mom? BREAKFAST! Mom is always making you breakfast, putting away your clothes, giving you this and giving you that. Why not start her day with something DELICIOUS that will warm her heart and make her tummy happy? The rest of her Mother’s Day will be a breeze and you will get all the brownie points!
With that said, let’s get to cooking. Make sure you have a Waffle Baker, just in case! The Mother’s Day recipe I highly recommend is none other than a “Wafflemisu Cake”. Just the name makes me hungry. The recipe is as follows and don’t forget to serve it to her in bed! Bring her a cup of her favorite kind of coffee or milk, whatever she prefers and surprise her before she even begins her day. That will bring so much joy to her heart and really show how much you care. Being appreciative and putting forth the effort will not go unnoticed, believe in that and give it your all, you can do it! Cooking is not necessarily my specialty, but you better believe I will be home this weekend and am going to surprise my mom with Wafflemisu Cake with a smile and a warm cup of joe! Wafflemisu Cake Recipe for Mom:
Makes 4 Waffles (Perfect!)
Ingredients:
Waffles:
6 Large Eggs, separated
1/8 Teaspoon Cream of Tartar
3/4 Cup Tablespoons Granulated Sugar, Divided
1 1/2 Cups All-Purpose Flour
1/2 Teaspoon Baking Powder
1 Teaspoon Mi Huerta Vanilla Extract****
1/4 Teaspoon Salt
For Filling:
1 Cup (8 ounces) Mascarpone Cheese
1/2 Cup Granulated Sugar
1/4 Teaspoon Mi Huerta Vanilla Extract***
2 Cups Heavy Cream
1 Cup Brewed Espresso, Lukewarm
Cocoa Powder, for dusting
Chocolate Curls, for garnish
Directions:
Preheat the Waffle Baker
Combine egg whites and cream of tartar in the bowl of a KitchenAid Stand Mixer fitted with a whisk attachment. Beat on medium-high speed until frothy, then add 1/4 cup
granulated sugar. Then increase the speed to high and whip until the whites hold soft peaks. Transfer to a clean bowl and set aside.
Now, return the mixing bowl to Stand Mixer and don’t worry about a little bit of egg white being in there. Replace the whisk with a flat beater attachment. Then add the egg yolks and remaining 1/2 cup of sugar to the bowl. Beat on medium-high speed for 1 to 2 minutes or until yolks are thick and light yellow in color. Mix in Mi Huerta Vanilla Extract and salt.
In a small bowl, whisk together flour and baking powder until evenly incorporated. Fold into egg yolk mixture until it’s stringy and only a few streaks of dry ingredients are left. Fold in 1/3 of the egg whites to lighten; add remaining egg whites and fold until just incorporated. Do not over mix.
Next, scoop a heaping 1 cup of batter into the Waffle Baker, flip and repeat with remaining batter on other side. Cook for about 3 minutes and 30 seconds or until the waffles are golden brown and crisp. Remove from the Waffle Baker and repeat with remaining batter. Let the waffles cool.
To prepare the filling, combine the mascarpone cheese, sugar, and Mi Huerta Vanilla Extract in the bowl of a stand mixer fitted with the flat beater attachment. Mix on medium speed until everything is evenly combined. Add the heavy cream and beat until thickened and smooth. If the filling is a little too thick, mix in another tablespoons or two of heavy cream as needed. Remember the filling will continue to thicken as it stands.
Now, place 1/2 inch of brewed espresso in a shallow plate or pie pan. Dip the bottom of EACH waffle BRIEFLY in the espresso, then stack on the serving plate for mom. Spread a generous 3/4 cup of filling between each layer, repeating with remaining waffles. Dollop remaining mascarpone mixture on top, then dust with cocoa powder and sprinkle with chocolate shavings.
BEST BREAKFAST EVER! Serve this delicious masterpiece to your mom with fresh flowers, coffee and a big hug. It does not matter what age you are, this special effort will never be forgotten and she will look back on it with so much love and appreciation. That is what Mother’s Day is really all about.
