Featured Recipe: Puerco en Mole Verde (Pork in Green Mole)

*Serves 6-8*

 Ingredients:

– 1 jar Mi Huerta Mole Verde

– 2 lbs pork shoulder, cut into 1-inch cubes

– 2 medium potatoes, peeled and cubed

– 2 carrots, cut into chunks

– 1 white onion, diced

– 4 cloves garlic, minced

– 2 tablespoons vegetable oil

– 4 cups chicken broth

– Salt to taste

 

Instructions:

  1. Season pork cubes with salt. Heat oil in a large Dutch oven over medium-high heat.

 

  1. Working in batches, brown the pork on all sides until golden (about 5-7 minutes per batch). Remove and set aside.

 

  1. In the same pot, sauté onion and garlic until translucent (about 3 minutes).

 

  1. Return pork to the pot. Add Mi Huerta Mole Verde and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour.

 

  1. Add potatoes and carrots. Continue cooking for 30-40 minutes until vegetables are tender and pork is fall-apart soft.

 

  1. Adjust seasoning to taste.
