Flor de Calabaza Soup

Transform your Mi Huerta Flor de Calabaza into a comforting homemade soup!

Time: 25 min | Servings: 4-6

 

Ingredients:

– 2 cups Mi Huerta Flor de Calabaza

– 1 onion, chopped

– 2 garlic cloves, minced

– 1 cup corn kernels

– 1 zucchini, diced

– 6 cups chicken broth

– 1 sprig of epazote

– 2 tablespoons oil

– Salt and pepper to taste

 

Instructions:

  1. Heat oil and sauté onion and garlic until translucent
  2. Add corn and zucchini, cook for 3 minutes
  3. Add Mi Huerta Flor de Calabaza and broth
  4. Add epazote, salt and pepper
  5. Cook over medium heat for 15 minutes

 

Serve hot and garnish with:

– Mexican cream

– Crumbled fresh cheese

– Crispy tortilla strips
